A quick transfer delivers you to the Annex, the private event space of Astoria’s renowned restaurant, Baked Alaska. Starting from humble beginnings as a mobile kitchen traveling from festival to festival in Alaska, Baked Alaska opened in 2000 in a permanent, stationary location in old-town Astoria, and expanded to its current location in 2001.
Today, Baked Alaska features a dining room perched out over the Columbia River and a nearby pizzeria, with an open kitchen and brick-lined pizza oven. It is here next to the pizzeria entrance that the Annex is situated, ready to host you for your seafood cooking experience conducted by Baked Alaska founder and owner, Chris Holen.
Gather around the open kitchen to witness Chef Holen fileting fresh salmon and demonstrating proper cooking techniques. He will whip up a quick sauce to accompany the fish, as well as create a side dish utilizing seasonal, non-seafood ingredients. All this while sampling fine house wines produced in the Pacific Northwest.
Chef Holen will also spin tales of his personal story, sharing with you his philosophy on how food can give you a sense of place. His own place in the culinary world is prominent: Chef Holen has appeared on numerous travel-themed television shows, cooked at The James Beard House in New York City, and represented the state of Oregon at the Great American Seafood Cookoff in New Orleans. A teacher at heart, Chef Holen has taught a cooking class alongside the great Graham Kerr of The Galloping Gourmet fame.
After this compelling peek into the mind of a passionate connoisseur of food, life and the history of Astoria, return to the pier.
