Warren Fahey (Sydney, Australia)
Warren Fahey is an internationally-recognized cultural historian, prolific author, broadcaster, and noted performer who specializes in the 'curious' side of history and folklore. His talks, always illuminating and entertaining, are full of energy and humor as he firmly presses nostalgia buttons while exploring his favorite subjects of national identity, music history, Asian-Pacific religion and legend, maritime lore, and international food traditions.
In his native Australia, he has been recognized with his country's highest awards including the Order of Australia (AM) and, in 2010, the Government's Don Bank's Music Award for lifetime contribution to the arts. Warren is the author of over 25 books, various e-books, and producer of countless historic recordings and films. He has written for numerous magazines on lifestyle and travel - including Condé Nast Traveler, Harpers Bazaar, and Vogue.
Dan Raviv (Washington, D.C.)
Dan Raviv is an award-winning national correspondent for CBS News and has reported on radio and television from over 35 countries, including a dozen years in the London Bureau. He was on the Berlin Wall as it fell, in Moscow as the Soviet Union collapsed, at the scene of many terrorist attacks including Lockerbie, and in Havana as Fidel Castro welcomed the Baltimore Orioles for an exhibition game. On 9/11, Dan’s clear, calm voice, kept millions of Americans informed and reassured during more than eight hours of non-stop live radio coverage. Dan anchors the major world events for CBS Radio News, including Election Night coverage. He is a respected authority on the Middle East and author of a best-seller, Every Spy a Prince: The Complete History of Israel’s Intelligence Community, as well as his latest Spies Against Armageddon and Friends In Deed: Inside the U.S. - Israel Alliance. Dan also became an expert on entertainment, mergers and movie-making with his book about Marvel’s renaissance after bankruptcy, Comic Wars.
David Wong is the Executive Assistant Manager at the Macau Institute of Tourism Studies (IFT), where he is responsible for Food & Beverage including the BIB Gourmand recommended Michelin Guide Educational Restaurant and teaching related subjects. His deep knowledge of Macau’s culinary delights is captured in his award winning cookbook, The Art of Modern Portuguese Cuisine, now in its second edition and the establishment of the Macau Culinary Association of which he is a founder. David was born in Hong Kong, but was raised and studied in the UK since the age of 4. He graduated with a Masters of Art in Hospitality Management from Birmingham University. David has worked in restaurants and hotels around the globe, including with the late Jean Bordier (M.O.F. and Chairman of the Master Chefs of France) at the L’Aubergade in France, Anton Mosimann, London, OBE and Rick Stein, OBE in Padstow, England. His hotel experiences include the Mandarin Oriental in Macau, the Westin Banyan Tree in Bangkok, the Dusit Thani, Bangkok and the Luxury Collection Sheraton Grande in Phuket, Thailand. He counts among his accomplishments, cooking at the legendary James Bread House in New York. David writes restaurant reviews and wine columns for South China Morning Post, Hong Kong/Macau Tatler, Destination Macau, Macau Closer, Macau Culture Guide, Inside Cuisine magazine (Australia) and Culinary Artist magazine (South Africa). David is an honorary advisor for the Hong Kong Sommeliers Association, Secretary General for Disciples of Escoffier in Macau and the Conseiller Gastronomie for the Confrérie de la Chaîne des Rôtisseurs.
Stephen Mack is the CEO of Asia Wine Service and Education Centre (AWSEC®). Stephen holds a Diploma from the UK’s Wine & Spirit Education Trust® (WSET®), for whom he runs Hong Kong’s only center offering courses and exams up to and including Diploma level, is an Advanced Sommelier with the Court of Master Sommeliers, a French Wine Scholar (with Highest Honors) and Barossa Master Educator. AWSEC won the award of WSET Educator of the Year, 2013. AWSEC is also an approved cener for courses from the French Wine Society, Barossa Wine School and Bordeaux L’École du Vin (Bordeaux Wine School). Stephen is also a Certified Sherry Educator and a Certified Spanish Wine Educator. Stephen has selected the wines for an international airline, judged in numerous wine competitions from London to Australia and has a wide range of corporate clients for whom he conducts entertaining and educational tutored wine tastings and wine and food dinners for their staff and clients. Stephen has also trained the staff of a number of wine producers and distributors, restaurants and hotels all over Asia. Stephen is a renowned wine educator and speaker and has given wine presentations all over the world on subjects including all the world’s major wine countries and regions and on matching wine with various cuisines. Stephen has also had articles published in a number of wine and food magazines and he is a member of the UK Circle of Wine Writers.
Chris Patino is the Director of Spirits Education and Mixology for Pernod Ricard USA. Though he lives now lives in Brooklyn, NY, Chris is a loyal New Orleanian at heart where he began his career in the spirits industry in 2004. Throughout his travels he has spoken, stirred and shaken alongside bartending legends such as Dale DeGroff, Dave Wondrich, Steve Olsen, Tony Abou-Ganim, Gary Regan, Simon Ford and Nick Strangeway. Chris has contributed to BarSmarts, Pernod Ricard’s award winning spirits and mixology program, and helped to shape numerous educational initiatives in collaboration with an array of industry luminaries, including San Francisco based cocktail consultants, the Bon Vivants and the three Michelin Star restaurant, Alinea. For the past three years, he’s traveled the United States hosting Speed Rack, an internationally acclaimed bartending competition developed in support of raising awareness for breast cancer. Having successfully completed a number of the industry’s premier educational programs, including the B.A.R. 5 Day in New York City and the Bols Bartending Academy in Amsterdam, Chris considers himself to be a lifelong student of the spirits industry, and never misses the opportunity to visit a new bar, or a new distillery, in support of his efforts.

Bruce Murray has been a C.P.G.A. member for over 40 years serving the C.P.G.A. as a Director, as well as serving as chairman of many association portfolios. He has been a Head Professional/Director of Golf at five clubs in his career the most prominent being Royal Montréal, Shaughnessy in Vancouver and now Wildfire in Lakefield, Ontario. Bruce's responsibilities have varied within the scope of the various clubs, but teaching has been and remains his main passion. He has taught students of every level, from novices to professionals and leading amateurs. Bruce is now retired from the private club life and lives outside Halifax, Nova Scotia.
