Heinz Von Holzen (Bali, Indonesia)
Heinz von Holzen planned a career in engineering and it was lack of apprentice positions that he decided to take up a chef apprenticeship instead. Heinz traveled and cooked through Europe, Asia and Australia before settling down in Bali where he opened the Ritz Carlton Bali as Executive Chef. Following this venture, he opened his own restaurant, Bumbu Bali Restaurant and Cooking School. Bumbu Bali is the only restaurant in Bali that serves thoroughly authentic Balinese cuisine in a beautiful, traditional setting.
Fongyee Walker and Edward Ragg
Fonyee Walker is mainland China's most qualified wine educator having passed her Master of Wine Theory and practical examinations. She is a leading WSET Certified Educator and Assessor teaching all over China. A WSET Level 4 Diploma holder and Associate of the Institute of Wines & Spirits, Fongyee also judges for leading Chinese magazines, Chinese wine challenges and serves as an international judge. Edward Ragg is the first foreigner to be appointed an Associate Professor in the Department of Foreign Languages & Literatures at Tsinghua University, where he teaches literature in English and has established the University's first wine course, as well as founding the Tsinghua University Wine Association (est., 2012). Edward is a WSET Level 4 Diploma holder and Associate of the Institute of Wine & Spirits (AIWS). He is a Certified WSET Assessor and also holds SWE and Court of Master Sommeliers qualifications. He is an experienced writer, published poet, literary critic, wine writer and guest international judge. Fongyee and Edward co-founded Dragon Phoenix Fine Wine Consulting, Beijing’s first and fully independent wine consulting and education service.
Tony Abou-Ganim (Las Vegas, NV)
Tony Abou-Ganim is a celebrated mixologist with an extensive background in the beverage industry. He has worked in San Francisco and New York City before being hand-picked by Steve Wynn to create the cocktail program at the Bellagio in Las Vegas. Abou-Ganim won the 2007 Iron Chef America competition with Mario Batali, has a DVD, and written several books. He has also appeared on the Fine Living Network program Raising the Bar: America's Best Bar Chefs. Currently, Abou-Ganim operates his own beverage consulting firm that specializes in bar staff training, product education and cocktail development. He holds the title of National Ambassador of the US Bartenders Guild and is an Associate Member of the Museum of the American Cocktail.

The relaxing and social aspects of knitting have been added on select cruises. On this sailing, TBA will host knitting classes and all levels are welcome. Participants are encouraged to knit together sharing skills and advice in a congenial environment. Participation is limited.

Want to take your home movies to the next level and learn how to share them with family and friends? In five entertaining classes, learn how to shoot and edit short movies using an iPad. Improve your video and photo skills. The course is taught by professionals, but aimed at non-professionals.
Course requirements: please bring your own iPad pre-loaded with the iMovie application. If you do not already own the iMovie for iOS app, you must have iOS7 in order to download iMovie from the App Store. If you have an older version of the iMovie app, be sure to update to the current version. You cannot download the app on board the ship. Please sign up online using the Priority Check-in & Planning Center (PCPC). If you sign up on board, make sure to sign up EARLY, in the Library, as the class size is limited.

R. Bruce Murray (Deep Cove, Nova Scotia)
Bruce Murray has been a C.P.G.A. member for over 40 years serving the C.P.G.A. as a Director, as well as serving as chairman of many association portfolios. He has been a Head Professional/Director of Golf at five clubs in his career the most prominent being Royal Montréal, Shaughnessy in Vancouver and now Wildfire in Lakefield, Ontario. Bruce's responsibilities have varied within the scope of the various clubs, but teaching has been and remains his main passion. He has taught students of every level, from novices to professionals and leading amateurs. Bruce is now retired from the private club life and lives outside Halifax, Nova Scotia.
